Current regulations you need to know

The new Rules and Regulations for Food Service in Georgia (Chapter 290-5-14) were adopted February 13, 2007.  Major changes and a new inspection report form have been implemented.

Some specific changes: having a Certified Food Safety Manager on staff, understanding “Demonstration of Knowledge” requirements, Exclusion and Restriction, no bare hand contact with ready-to-eat foods, proper cooking and reheating temperatures, using Time as a Public Health Control, proper date marking and disposition, documenting receiving temperatures, knowledge of sanitation and use of test strips, no hand/arm jewelry except a plain wedding band, wiping cloths properly used and stored, hand sink water temperature.
